Raw means Japanese release. The sub times mostly get updated here after the first episode has shown up on the platform that licences them, because until they are released, you very often don't know when exactly the sub comes out. Sometimes it's the same time, sometimes an hour or two later.

The strongest job is apparently not a hero or a sage, but an appraiser (provisional)! episode 2 shows up on Saturday, but when you click on it, it says it'll air next Tuesday.
Yeah, not only that when you go to next week Saturday, it says it’s episode four I don’t know if maybe the timeslot got moved for this week or what

Both are correct. They air earlier than the TV broadcast on some streaming services.
I’m getting three different dates for episode releases of Food Diary of Miss Maid
I got episode 1 on April 5th a while back from here, now I get a ping saying that it’s out now, as well as that the next episode comes out next week, seemingly this is a early broadcast, but main broadcast for episode 1 is on the 5th, so shouldn’t episode 2 come out a week from then

Episode 1 aired early on March 31st. Episode 2 will air early on April 5th. Episode 3 will air on April 12th and so on every week ahead of the TV broadcast.
The episode calculation logic doesn't support such weird release schedules very well so it's slightly buggy.
